How To Cook Wild Duck || Full Duck Processing And Cooking Villgae Style || Duck Curry Recipes 2017 Duck is used in a variety of dishes around the world, most of which involve roasting for at least part of the cooking process to aid in crisping the skin. Notable duck dishes include: Bebek Betutu – a famous traditional dish from Bali, Indonesia. The duck is first seasoned with pungent roots and various herbs, wrapped with banana leaves, and roasted. Chicken is also used to prepare Betutu. Confit – duck legs that have been cured (partly or fully) in salt, then marinated and poached in duck fat, typically with garlic and other herbs. The French word confit means "preserved", and the French name for duck confit is "confit de canard". Czernina – a sweet and sour Polish soup made of duck blood and clear poultry broth. It was once considered a symbol of Polish culture until the 19th century, customarily served to young men and is even featured as a plot device in a famous epic poem called Pan Tadeusz. Duck à l'orange – a classic French dish in which the duck is roasted and served with an orange sauce. Foie gras – a specially fattened and rich liver, or a pâté made from the liver, sometimes taken from a duck but usually from a goose. Long Island roast duckling – this is a whole roasted bird, sometimes brined previously. When done properly, most of the fat melts off during the cooking process, leaving a crispy skin and well-done meat. Some restaurants on Long Island serve this dish with a cherry sauce. Oritang – a variety of guk, Korean soup made with duck and various vegetables. Peking duck – a famous Chinese dish originating from Beijing, prepared since the Ming Dynasty era. It is prized for the thin, crispy skin, with authentic versions of the dish serving mostly the skin and little meat, and eaten with pancakes, scallions, and hoisin sauce or sweet bean sauce. Pressed duck – a complex dish originally from Rouen, France. Turducken: an American dish that comprises a turkey, stuffed with a duck, which is in turn stuffed with a chicken. Zhangcha duck – a quintessential dish of Sichuan cuisine. It is first prepared by smoking a marinated duck over tea leaves and twigs of the camphor plant, then steamed, and finally deep fried for a crisp finish. Also called tea-smoked duck. One species of freshwater duck, the mallard, has been domesticated and is a common livestock bird in many cultures. Duck is eaten in various cuisines around the world. Duck meat is derived primarily from the breasts and legs of ducks. The meat of the legs is darker and somewhat fattier than the meat of the breasts, although the breast meat is darker than the breast meat of a chicken or a turkey. Being waterfowl, ducks have a layer of heat-insulating subcutaneous fat between the skin and the meat. De-boned duck breast can be grilled like steak, usually leaving the skin and fat on. Internal organs such as heart and kidneys may also be eaten; the liver in particular is often used as a substitute for goose liver in foie gras. Duck is particularly predominant in the Chinese cuisine — a popular dish is Peking duck, which is made from the Pekin duck. Duck meat is commonly eaten with scallions, cucumbers and hoisin sauce wrapped in a tortilla-like pancake made of flour and water or a soft, risen bun known as gebao (割包). The Pekin duck is also the most common duck meat consumed in the United States, and according to the USDA, nearly 26 million ducks were eaten in the U.S. in 2004.citation needed Because most commercially raised Pekins come from Long Island, New York, Pekins are also sometimes called "Long Island" ducks, despite being of Chinese origin. Some specialty breeds have become more popular in recent years, notably the Muscovy duck, and the mulard duck (a sterile hybrid of Pekins and Muscovies). Subtly echoing the 2005 episode dubbed "the Greek Watergate," a pair of telecom engineers set out to investigate hacker activity — make a scandalous discovery— in this timely and politically charged debut from director Yannis Sakaridis. For his first foray into feature direction, veteran editor Yannis Sakaridis had developed a project with Attenberg star Vangelis Mourikis, but, in the wake of the Greek debt crisis of 2009, funding for the venture fell through. Undeterred, Sakaridis penned a new script, assembled a crew of friends and former collaborators, and took to the streets for a twenty-three-day, guerilla-style shoot. The result is Wild Duck, a story in which, perhaps inevitably, reverberations of Greece's current economic turmoil abound. Self-employed telecom contractor Dimitris (Alexandros Logothetis) is forced to close his business after becoming deeply indebted to a local loan shark. In urgent need of quick cash, he accepts an offer from his friend Nikos (Giorgos Pyrpasopoulos), a fellow telecom engineer who works for a major service provider. Parties unknown have succeeded in breaching the company's networks — echoing the 2005 scandal that saw the phones of the country's top politicians illegally tapped — and Nikos enlists Dimitris to aid him in revealing the culprits. Their investigation leads them to an apartment in a nondescript block of flats, but rather than a tidy resolution to the case, their discovery provides Dimitris with a far more personal and intractable dilemma. Despite the heft of his politically charged subject matter, Sakaridis has fashioned a film that is quiet and introspective, as if edited in sync with its protagonist's emotions. Sakaridis's discreet yet penetrating gaze, evidently informed by his non-fiction work, is artfully conveyed by the fluid compositions of cinematographer Jan Vogel (co-director of 2011's Wasted Youth). Dutch Oven Wild Duck (Made in a 12” Camp Oven) Ingredients: 4 wild ducks, cleaned (approx. 2 – 2½ lbs. per duck) 4 stalks celery, chopped (1 stalk per duck) 2 apples, halved with each half cut into 3 pieces (1/2 apple per duck) 1 yellow onion, quartered (1 quarter per duck) 1 cup dried red tart cherries (1/4 cup per duck) 1 cube butter, softened (1/4 cube per duck) 1 cup white wine (or chicken broth, or even water) optional – salt and pepper Directions: 1. Prepare fresh birds by removing feathers, head, feet, wings and innards. Rinse birds with cool water, removing any remaining pin feathers. Pat dry & set aside. 2. Preheat camp oven, using 10 coals under the oven and 12 coals on the lid. (325°F) 3. While oven is preheating prepare ingredients for the cavity of the birds, as noted above. 4. Coat the inside of the cavity and the outer skin of each bird with softened butter and stuff cavity of each bird with the stuffing mixture. (Celery, apple, onion and cherries) Season each bird with salt and pepper. (Optional) 5. Place birds into the preheated oven and add wine. Place lid on oven and replace coals with a fresh batch. Bake for 1½ hours, changing coals again, after 1 hour. (Internal temperature of birds should reach approx. 190°F.) 6. Serve promptly and Enjoy!!! Total cooking time, 1½ hours Serves 4 people

Wild Duck Breasts with Grand Marnier Sauce | Armadillo Pepper

In today’s episode, we are searing wild duck breasts and finishing with a Grand Marnier sauce. The Grand Marnier sauce gives the duck a very rich flavor. This recipe is really special to me as my son shot his first ever wild duck on his first duck hunt. You can make this duck recipe inside on the stove or out on the grill. All you need is a hot cast iron skillet. The original recipe is from ducks.org, but I’ve modified it for my taste. Ingredients • 2 wild duck breast • 1 tablespoon olive oil • 1/2 teaspoon kosher salt • ½ teaspoon cracked black pepper • 1/8 teaspoon Cardamom • 2 tablespoons vegetable oil • 2/3 cup orange juice • 1 tablespoon orange zest • 1/8 teaspoon red pepper flakes • 2 tablespoons honey • 1/3 cup Grand Marnier liqueur • 1 stick butter, cut into 3 pieces Recipe Instructions 1. Mix the olive oil, salt, pepper and cardamom well, then place the mixture and the duck breasts in a Ziploc bag (or vacuum seal) and marinate for 3 hours. 2. Heat a cast iron skillet with the vegetable oil over medium-high heat and brown the duck breasts on both sides or until rare, about 1.5 - 2 minutes per side. If you want the duck cooked medium rare, then add about 1 minute per side. I encourage you to not cook duck breast past medium rare. 3. Transfer the duck to a plate and lightly cover with aluminum foil. 4. To prepare the sauce, combine orange juice, orange zest, cardamom and red pepper in a pot. Bring to a boil over medium-high heat. 5. Add the honey and then Grand Marnier. 6. Reduce heat to medium and simmer until the mixture is reduced to about ¼ cup. Remove from the heat and stir in butter, a piece at a time. 7. Slice duck and drizzle the sauce over the sliced duck. Serve the remainder of the sauce to dip. Ingredients: Level: Difficulty Time: 2 Days Ingredients: Duck 2 cups of vinegar 2 cups of honey 2 cups of water 1 Maltose 2 tbsp sugar 2 tbsp garlic powder 1 tbsp white pepper 1 tbsp five spice powder 1 tbsp ginger powder 1 tbsp salt 4 tbsp hoisin sauce Licorice Star Anise Dried Citrus Peel Cucumber Green Onion Ginger Tortilla wrap (optional) Directions: Pump air underneath the skin through the neck cavity to separate the skin from the fat and the flesh. This process will make the skin very crispy. Cut off the wings and the feet. Then make a incision on the bottom as shown here, remove the innards. Keep the hearts and gizzard, I'm going to make a dish off of them in the future episode. Wash the duck thoroughly. Wash the cavity a few times to remove any residue. Here are the ingredients we are going to put inside the duck. Next, combined the ingredients into the hoisin sauce. Then put the mixture inside the duck's cavity. Put in 1 slice of ginger and one green onion. This will give it an aromatic flavor on the inside. Use a skewer to sew up the cavity. First, hold the skin together then slowly puncture through, then overlap the skin and continue sewing until there is no holes left. Make sure there is nothing leaking out of it. I use a hook to hang the duck, if you don't have one you can just use strings and tied it around it's wings and neck. Next, refrigerate the duck for 24 hrs laying the duck belly side down. Next in a pot add in 2 gallon of water, add Licorice, star anise, and dried citrus peel. This add an aromatic flavor to the skin. Boil for about 15 to 20 min. We are going to make glazing for the duck. In a bowl add 2 cup or ml of honey, 1 tbsp of lemon juice, 2 cup or 473 ml of vinegar and 1 maltose. The maltose is very sticky so we want to make it into a more manageable form. Boil 2 cup of water and add maltose into the hot water. Then mix the maltose with the other ingredients. Next, soaked the duck in boiling water for 15-20 secs. This process quickly tightens the skin back up.Then pour the mixture over the duck one at a time. Hang the duck to dry for a minimum of 5 hrs. use a fan to blow the duck dry until the skin become springy. Preheat the oven to 350F, after you put in the duck turn the temperature to 300F and cook for 40-45 min. Put a drip pan underneath to catch the fat. Turn the duck 180 degree after 20min of cooking, this ensure even cooking and browning of the skin. After the duck is fully cooked, turn the fire off and leave it in the oven for additionally 15 min. This will let the juice be reabsorb into the meat making the meat very juicy and tender. Now, I'm going to show you how to cut the meat. First, locate the sternum, make a cut near the sternum, then make a cut on the side of the duck. Next, cut sideway diagonally. Now it's done, serve it with spring onion, cucumber and hoisin sauce.
