I present Banana Muffin Recipe today. It is a homemade, quite easy and simple video showing how to make banana muffins from scratch. I give complete cooking instructions and measured ingredients that makes baking even easier. So if you are about to bake some good American style muffins then this cooking video is for you. This video recipe is dedicated to people who enjoy baking goodies. I honestly believe that any respecting himself foodie will appreciate coffee or tea served with homemade pastry. What I like about baking muffins is that you can play with those recipes. You can add your favorite fruits and nuts or just skip sugar frosting like I did. I call this my healthy muffins recipe as I skip on coloring and frosting that saves lots of calories and also unnecessary chemicals. And in this case more simple taste is just better in my opinion. If you want to make this a vegan recipe just skip egg, add another banana and substitute melted butter with melted coconut oil. As I said before you can play with this recipe as cooking supposed to be your adventure in the kitchen. You can adjust this recipe and its ingredients to your lifestyle:) Ingredients needed for this recipe: Wet ingredients: 3 ripe bananas 1 large egg 1/4 cup melted unsalted butter Dry ingredients mixed in separated bowl: 2 cups whole wheat flour 1/2 cup sugar 1 1/2 tsp baking powder 1/2 tsp salt 1 1/2 tsp baking soda 1/4 cup dried cranberries 1/4 cup chopped walnuts Additional ingredients: Cooking oil for greasing the baking dish. First you will have to mash ripe bananas. You can use fork for this process. Add egg and melted unsalted butter. Mix using kitchen mixer. In another bowl combine all dry ingredients and then add them to the wet ingredients mix. Mix everything well until consistent batter. Grease the muffin baking dish with your choice of cooking oil or as I did with coconut oil. Pour batter on the baking dish. Preheat oven and then bake at 400 F / 205 C for 25 minutes. Cool muffins before serving. Muffins should regain their shape (bounce back) after delicately pressing their top surface. You may experience a lot of fun making this together with your kids at home. I personally like to bake when I'm more stressed out - somehow baking relaxes me. At this time of the year I like to add some cranberries and walnuts to my recipes but you can easily substitute those ingredients with you favorite components. Hope you enjoyed this video recipe. How To Make Milk Kefir WITHOUT Grains - Making Healthy Homemade Fermented Foods | The Food Nut

I show you today How To Make Milk Kefir without kefir grains at your own home. Making kefir can be easy and you will need just simple products available in every store and basic kitchen tools. Milk Kefir is a fermented homemade healthy drink loaded with probiotic cultures and made with some sort of starter. Some people claim that fermented foods are great for a weight loss (because it helps restoring beneficial gut bacteria and helps fighting candida that is linked to many issues and among them obesity). I personally can't confirm that and I drink it "only" for health benefits and really unusual (but great) taste. Today you can buy bottle of milk keffir in almost every single grocery store. There is just one problem. Most of kefir that they sell is just junk and you are much better off making it yourself. Kefir producers claim on their bottles that there are billions active probiotics in their product but this statement is false in most of the cases. For example some kefirs were pasteurized after creation and before shipping to the store. What sense does it make?! So you are actually paying for dead (or close to dying) bacteria that will not do anything for you. Why to waste money for those crappy and low quality kefir-like drinks. It is better to have it under control and make it at home. If you want to make milk kefir from scratch you will need whole fat organic milk and whole fat organic kefir (this kefir will be our starter and it will be used instead of kefir grains). I tried many different organic companies to make homemade kefir milk and sometimes I found out that my kefir didn't start to ferment for whatever reason. Something was fishy with milk or kefir. When I use those particular products that you can see in this video it always come out perfectly and it wasn't always the case with other products. I used Whole Fat Milk by Super Natural and Whole Milk Organic Kefir By Wallaby (BTW: THIS VIDEO WASN'T SPONSORED IN ANY WAY BY THOSE CORPORATIONS). My point is that you should not try to save money when buying supplies for homemade kefir. Low quality milk may spoil your kefir and all your efforts will be wasted. Step by step instructions: 1) Purchase whole fat milk and whole fat kefir (high quality products please). 2) Bring milk to 90 F / 32 C in a big pot. If you don't have a kitchen thermometer you can use your finger to feel the temperature - when it is nice and warm BUT comfortable and ABSOLUTELLY NOT hot then the temperature is about right. Please be extra careful to not burn your skin so check temperature with this method often. 3) Add 1 cup of kefir to the milk and stir it well. 4) Cover it with a linen fabric at set aside in a nice and warm place OR use oven method : if you have an oven that allows to set very low temperature to just keep something warm use this option and you will get exactly same results as I achieved after 2 days in about 12 hours. 5) Good Luck! :) So do you still think that making kefir is hard? In this video I present Green Juice Recipe made with parsley, cilantro, lemon and apple. This well balanced homemade juice is excellent for detox and cleanse thanks to the herbs and it also helps with weight loss and is a part of healthy diet as it helps with body alkalization. I show how to make it in easy and simple way. Using nutritious ingredients such as cilantro and parsley in you juice will help you consume more nutritious green vegetables without this annoying to some people feel of the "grass chewing" - drinking half bunch of parsley and cilantro in one juice serving is easier than eating all of that at once and it can create even such seemingly unrelated benefit as a skin glow.. Although all those health benefits sound great you have to remember that it takes more than drinking a juice once in a while and that you have to follow your new healthy lifestyle (or diet) to achieve sustainable and long lasting change. Ingredients needed: 2 apples 2 lemons 1 bunch parsley 1 bunch cilantro Instructions and tips: Wash all those ingredients very well. It would be great if you could use organic fruits and vegetables for juicing as they have typically less pesticide residue and are more likely to have higher nutrition value. If you can't afford organic stuff then remember it is still waaaay better to use any fresh fruits and vegetables than skipping it altogether in favor of highly process food. Another great tip is that if you find in your store only old or not so fresh organic produce and really fresh conventional one then go for conventional. Freshness over the certificate. Peel lemons off. Don't peel apples (if you have organic or non-sprayed ones) as there is lots of vitamins in the near surface just under the peel part of apples. Make sure that you have good quality organic apples as if they are conventional then they are sprayed heavily with pesticides and it changes balance of benefits and disadvantages strongly... Just cut them in smaller pieces. Cut off the bottom ends of parsley and cilantro. First start juicing lemon. Next couple of pieces of apple and then leafy herbs. When you start juicing from more watery ingredient in the begin and leave more fibrous ones for the end then the fiber will help to flash out remaining juice stocked in the juicer (in-between mechanical parts). If you have to store your juice for later make sure you that you will completely fill out the container with liquid and don't leave too much air inside. This way it will keep fresh taste and some of its nutrients. Fresh juice oxidize very fast and that's why it is better if there isn't too much air inside the container. Fresh juice is a great addition to a healthy diet because it can be used as a detox or help you lose weight when used properly. It's a great example of a raw diet. In this Video I present Banana Oatmeal Cookies Recipe. It is a vegan and healthy version (contains no dairy, no eggs and no sugar ). I made them with peanut butter, bananas, oats, cranberries and almonds. It is an easy recipe for making a healthy snack. In this video I show step by step how to make those cookies. They don't contain any eggs, butter or milk so it is lactose free and dairy free what makes it also a healthy recipe as I used here only natural ingredients. The sweetness in those cookies comes from bananas' natural sweet taste. Another benefit of this cookies recipe is that there is no flour. Oats will work as a flour as they thicken the cookie mixture. To bake those cookies you will only need 7 components easily available in any grocery store that you might already have available in your kitchen pantry. So what are you waiting for?! Let's bake some delicious cookies! :) This cookie recipe contains peanut butter and almonds so if you are allergic to nuts you have been warned. :) Ingredients needed: 3 ripe bananas 1/4 cup dried cranberries 1/4 cup sliced almonds 4 cups oatmeal 1 tsp cinnamon 1/2 tsp vanilla extract 1/4 cup peanut butter Cooking instructions for this recipe: Mash 3 ripe bananas in a bowl using fork until completely smooth. Combine all ingredients. This mixture is enough for 12 medium sized cookies so form 12 balls of equal size. Transfer to baking dish. You can use my method to flatten the cookie using measuring cup. Just press the cup on the ball and it is ready. Preheat the oven. Bake at 350 F / 175 C for 25 - 30 minutes or until the edges of cookies are golden-brown. I invite you to see my colorful Oven Roasted Potatoes Recipe. I show you how to bake purple potatoes in oven with small pearl onions and herbs such as rosemary and sage and garlic so they taste like the best potatoes you've ever eaten! This is a great Thanksgiving dinner and every day recipe. The fall season brings us a new range of very tasty and colorful vegetables, fruits, and also potatoes that appear in a variety of shapes, sizes and colors from almost white, orange to purple. Personally I prefer making roasted potatoes as they have richer taste than boiled ones. For this recipe you will need baking potatoes, sweet potatoes and Purple Majestic potatoes. They will give a very interesting look to your dish. I also add pearl onion in all three colors : white, red and yellow. Adding fresh herbs such as rosemary, sage and also garlic is a must for this dish. Add some cooking oil that has medium-high smoking point. If you don't know how long to bake potatoes then you have to remember this golden rule: "until they are golden". :) In my case the baking time was 60 minutes at 350 F / 175 C. During the Thanksgiving time I like to add some dried cranberries to those potatoes before baking as it gives more holiday-ish vibe to the dish. This is vegetarian as well as a vegan recipe. It's a very easy baked potatoes recipe so everybody can enjoy this healthy food during holiday time. I serve those potatoes with my fennel salad and baked salmon. Links are below. In this video I present Jalapeno Poppers Recipe so I will show you step by step how to prepare this hot appetizer. I show my stuffing and ( simple cream cheese spread ). Process of oven baking reduces hot and spicy taste of jalapeno peppers so they are still spicy but cream cheese balances the taste so you will not give up the ghost :). Ingredients needed for this appetizer recipe: 8 jalapeno peppers 2 roasted garlic cloves 1 pkg. cream cheese 1 medium red onion 5 sundried tomatoes in oil chipotle spice salt black pepper First wash all the jalapeno peppers under running water and dry them well. Cut each pepper in half. Using a spoon dig out the seeds. Don't play with those seeds - they are very hot - throw them away. Don't touch your eyes or lips after handling jalapenos - I did it and believe me you don't want to follow my tragic mistake :D. Roast garlic cloves. Peel garlic off and mash with the kitchen knife. Add garlic to a big bowl. Add cream cheese. Dice red onion and also place it in a bowl. Add salt and black pepper. Combine all ingredients well. Using teaspoon stuff each jalapeno half with cream cheese spread. Make all peppers' stuffing even. Place stuffed peppers on baking dish. Garnish with chipotle spice before baking. Preheat the oven. Bake at 350 F / 180 C for 30-40 minutes. Bake until poppers are golden on the top. Serve on the appetizer plate when baked. Bon Appétit. Cherry Coffee Cake Recipe made from scratch is presented in this video. This is very easy homemade cake recipe with dark morello cherries. You can use fresh cherries, frozen ones or even from the compote. Just remember to use pitted cherries. This cake is a great sweet dessert which is easy and simple to bake. This coffee cake presents itself beautifully when it is served. The sweet taste from cherries may remind you of your grammas homemade cake from your childhood. Sweet aroma of baked cherry cake is just amazing. If you bake this cake once I can assure you that this will be your favorite recipe whenever you want to make a simple fruit pastry. Ingredients: 250 g ALL PURPOSE WHITE FLOUR 350 g PITTED CHERRIES 1/2 cup MILK 100 g UNSALTED BUTTER 3 EGGS 1/4 cup SUGAR 2 tbsp POTATO STARCH 1 tbsp BAKING POWDER DASH OF SALT additional 1/2 tsp SUGAR (FOR EGG WHITES) additional 1 tbsp WHITE FLOUR 1 tbsp POWDERED SUGAR (FOR DUSTING-OPTIONAL) INSTRUCTIONS: 1) Separate egg whites from yolks. Beat egg whites with a dash of salt until they are stiff. At the end of beating add sugar and beat those egg whites for couple more seconds. Put aside. 2) Warm up milk a bit on the stove. Take it on the side and add sugar and butter. Let the butter melt. Add also egg yolks. Combine everything using whisker. 3) In the mixing bowl add: all purpose white flour, potato starch, baking powder and the milk-sugar-butter mixture. Using mixer combine all those ingredients on medium speed. Reduce the speed to slow. Slowly start adding egg whites. Mix it just until you combine all ingredients. Don't over mix egg whites with batter. 4) Grease the 9 inch springfrorm pan. Transfer the batter to the baking dish. Level the surface of the batter. Dust with some flour on the top. Place fruits on the top. 5) Preheat the oven. Bake at 350 F / 175 C for 40-45 minutes. 6) When cake is baked let it cool. Dust with some powdered sugar. Bon Appétit! Homemade Carrot Cake Recipe is presented in this video. I show how to make this easy carrot coffee cake from scratch with leftover apple and carrot pulp from juicing - It is a great idea to reuse them after juicing. This recipe is very simple and easy mainly due to the fact that there is no icing and frosting. It has some healthy ingredients like honey, walnuts, aromatic spices and coconut oil and also flour used here is the whole wheat type and not the regular - white and fiberless one. Therefore for sure I can claim that it is a healthier version than the mainstream one. There is a complete list of ingredients and preparation & baking instructions below for this homemade carrot cake dessert. So let's bake! Ingredients needed: 3 1/2 cup carrot pulp (from making a carrot juice) 1/2 cup apple pulp (from making an apple juice) 1 cup coconut oil 3 eggs 3 cups whole wheat flour 1 1/2 chopped walnuts 1 cup honey 1 tbsp baking soda 2 tbsp cinnamon 2 tbsp nutmeg 1 tbsp vanilla extract Cooking (baking) instructions: 1) Place carrot and apple juicing pulp in the mixing bowl. Add other wet ingredients like honey, coconut oil, vanilla extract and eggs. Combine all wet ingredients. 2) Place whole wheat flour in a separate bowl. Add baking soda, cinnamon, nutmeg and crushed walnuts. Mix all dry ingredients. 3) Slowly start adding dry ingredients to the bowl with wet stuff. Mix everything well until everything is well combined. 4) Grease the springform pan using coconut oil. 5) Transfer mixed cake batter to the baking pan. Level the surface. 6) Preheat the oven. Bake at 350 F/ 177 C for 1 hour and 15 minutes. I recommend checking if the cake is baked with wooden stick. 7) After baking cool the cake. Take off the sides of springform pan. 8) Dust with some powdered sugar and it is ready to be served. This carrot coffee cake is very easy to make. For sure it is on the budget because you are reusing the juicing pulps. You will benefit with freshly squeezed juice and sweet aromatic cake for the dessert. You know you earn your slice of the cake as a snack if you drank juice for the lunch time :P This cake doesn't need to be refrigerated. It should be stored outside. I truly love this Oven Baked White Fish Fillet Recipe cooked in foil with lemon juice and oregano herb. I share with you my technique presenting how to cook this fish without any oil what makes it a great diet dish. This oven baked fish with a zesty dressing are great idea for a dinner. If you are able to buy fresh seafood always prepare it and cook it in the same day. If you live in a warmer climate (or during warmer season) transport your fish in cooler box with ice bags. Once I left my fresh seafood on a hot day in the car for just few extra minutes and believe it didn't smell so nice when I wanted to use it at home. Fish lesson learnt hard way. Coming back to the subject: frozen fish always losses its unique taste and texture will be more gooey in my opinion and even the best recipes will not help with that unwanted effect. To make this white fish recipe (serving for 2) you will need ingredients listed below: 2 white fish or basa fish fillets (actually this fish recipe goes well with any kind of white fish so cat fish for example is also ok) salt and black pepper 3 lemons 3 - 4 tbsp dry oregano 1/4 cup olive oil Cooking instructions: 1) Wash fillets under running water. Drain them and then place them on paper towel. 2) Place an aluminum foil in a cooking dish that fish will fit into. Make sure that you have some extra foil to use as a cover. 3) Transfer drained fillets to aluminum foil. Salt and pepper on both sides. Put fish aside and now it's the time for zesty marinade. 4) In separate container squeeze 3 lemons. Add oregano and mix it well. Oregano will absorb some of the lemon juice and it will soften thanks to that. Pour half of this mixture on the top of fish fillets. Put aside other half. 5) Cover fish fillets with the rest of aluminum foil. Make some holes in foil with a knife. 6) Preheat oven and bake at 400 F / 205 C for 30 minutes. 7) Add olive oil, salt and black pepper to leftover lemon mixture. Let it seat while fish is baking in the oven. 8) Serve this baked fish on the plate and pour leftover lemon-oregano-oil mixture just before eating. You may add potatoes to make it a great meal. Cooking fish in that way will prevent it from drying. I don't use any oil in this recipe for baking process itself. It is actually steaming in lemon juice and aroma of oregano herb that goes perfectly with fish. Be careful while transferring those fillets to the plate as they will be extremely tender and may easily fall apart. Zesty lemon dressing will give extra fresh taste and olive oil will nicely moisture and give some Mediterranean vibe to the dish so it will melt in your mouth. Additionally if you use this method you will not oxidize you olive oil that will prevent free radicals from creation and that will help you get all the health benefits of this amazing superfoods (olive oil and lemon juice). I explain how to easy it is to make delicious tofu meal and also share with you some cooking tricks. Below you will find complete list of ingredients and instructions. INGREDIENTS: 1 pkg TOFU 1/4 cup POTATO STARCH FLOUR 1/3 cup or as needed BBQ SAUCE 3 - 4 tbsp COOKING OIL BOILING WATER Optional: Roasted Garlic Dressing or any of your choice. Cooking Instructions: 1) Cut tofu in stripes. Place tofu on a drainer. Keep drainer in a sink or in a big glass bowl. Pour boiling water over tofu stripes. This process is a key as it will help tofu to be firm so it will not fall apart so easily. 2) Place paper towel on the cutting board. Separately place tofu stripes on the board. Place another paper towel sheet on the top of tofu and dry well. 3) Dust tofu well in potato starch flour. It will make tofu crispy after frying. 4) Warm up cooking oil on the pan. Place tofu stripes on the pan and fry them for 10- 15 minutes or until golden. Flip over and fry another 5-8 minutes. 5) Place crispy tofu stripes in a boul. In this video I present Baked Okra Recipe. I show how to cook fresh okra in oven (also called lady or ladies fingers sometimes). This is easy and healthy recipe with minimum time needed to prepare and effort to make. It goes also by the name of okro and ochro and it is a green plant that has many edible seeds inside its fruits. Seeds are edible and they're high in unsaturated fat. You may prepare lady fingers in many different ways. It can be eaten raw, cooked, roasted or baked. In this video recipe I focus on very easy method of okra baking. Ingredients needed: 1.25 lbs / 500 g fresh raw okra 1/4 tsp salt 1/4 tsp black pepper 1 tbsp cooking oil juice of 1/2 lemon Step by step cooking instruction: 1) Before you start make sure that you have washed okra under running water and drained it well. 2) Cut off both ends of okra's fruits. 3) Cut okra in small 1/4 to 1/2 inch pieces. 4) Place okra on baking dish. Add salt, black pepper, cooking oil. Mix everything well. Separate okra pieces from each other to help it bake evenly. 5) Bake at 375 F / 190 C for 30-40 minutes or until golden (it is crunchy when golden). 6) Transfer okra to a serving plate and squeeze fresh juice of 1/2 lemon. Done! Small cooking advice: While cutting okra you may notice its sticky juice. Don't worry about this. Just remember to wash cutting board right away after slicing okra. If this sticky liquid dries it would be hard to clean. This okra is a great idea for an easy side dish. It is very nutritious and low in calories. It goes great eaten by itself or served with mashed potatoes or mashed cauliflower. Adding lemon juice gives extra tart taste to this appetizer. This homemade creamer enriches my cup of coffee and enhances my coffee addiction. Coffee lovers will understand what I'm talking about. This creamer with stevia is a great substitute for people who like fancy coffee, are vegan or are lactose intolerant. It is based on coconut milk from the can (so the thick one). Cinnamon spice gives it an unique taste. There are two different ways of preparing this creamer an I explain them below. So brew your favorite coffee, pour it into your favorite cup and add my creamer. It always tastes better from beautiful personal cup or mug. Ingredients needed: 1/4 cup chilled coconut milk from the can 1 tbsp cinnamon dash of vanilla extract pure stevia extract for sweetness (as desired) or sugar Instructions: Mix everything really well in a bowl. It is actually ready to be added to your coffee right away. But in order to have a real fun with this creamer you will need one zip lock and ice cube tray and follow those steps below: 1) Put zip lock bag's corner into a glass. 2) Transfer previously made creamer to the zip lock bag. 3) Hold the zip lock bag in your hand and cut off the bag's corner. 4) Put the right amount of creamer into each slot of ice tray. Gently shake the tray to level creamer's surface. 5) Place the tray in the refrigerator for about 30 minutes. 6) Brew the coffee and add frozen creamer to your beverage. In this video I preset Vegan Green Lentil Soup Recipe. I show how to make this homemade and healthy vegetable soup in an easy way. This lentil soup owns its rich taste to the Mediterranean spices. It can be great additions to your healthy diet (it can assist a weigh loss) and a vegan lifestyle. Lentil soup recipe ingredients: 5 onions coconut oil or your favorite cooking oil 1 lbs green lentils 3 tsp turmeric 1 tsp curry 1/2 tsp paprika cayenne pepper (optional) Salt and black pepper 2 liters filtered water coconut milk for garnish lemon juice chopped parsley I personally prefer green lentils for this lentil soup recipe but if you want to try different color you can feel free and choose whatever color you like. This recipe works with all lentils without a drop off discrimination regarding their color. Just remember to rinse lentils with cold water as they may have some dust. Drain them well before adding them to the pot. In this recipe I don't use any animal products so it is a 100% vegan recipe. I use coconut oil as cooking oil and in the end I also use coconut milk. I don't mind the taste of coconut milk in my food but if you are not the fan of that you can substitute this with your choice of cooking oil or milk. As you can see I use a lot of Mediterranean spices such as turmeric and curry. Without those spices this soup doesn't exist. Even if you are scared of adding this amount of spices I advise you to go out of your comfort zone and explore little bit with different tastes - you may be surprised and discover that you have new preferences. It is important to blend this soup after cooking. If you choose you may also add less water if you want this soup to be thicker. Bread is a nice addition. I'm sure you will enjoy making this healthy and easy recipe. It is a great fall and winter dinner dish. Cooking instructions for this soup: 1) Cut onions into cubes and sauté on the pan with oil. 2) Wash lentils and drain them well. Add lentils to sautéed onions. 3) Add spices such as: turmeric, curry, cayenne pepper (optional), salt and black pepper. Fry for couple of minutes. 4) Add 2 liters of filtered water and cook until lentils are soft. 5) Blend soup in the blender until completely smooth. 6) Serve on the soup plate or bowl. Add some coconut milk and chopped parsley on the top. 7) Squeeze fresh lemon when it is served. 8) Serve with fresh bread. Please share this recipe with your friends and family if you liked it. This homemade recipe is also gluten free so if you are gluten intolerant you may satisfy your tummy with this delicious squash. Ingredients needed to make this dish: 1 spaghetti squash cooking oil in a spray salt Cooking instructions: Start with washing your squash under running water. Dry it before cutting. Spaghetti squash can be cut horizontally or vertically. Vertical cut doesn't slash fibers in half. Cut vertically for longer fibers as I did. Scoop out all the seeds and put them in a bowl. They are healthy and edible - link with video showing what to do with those seeds is below. Place squash cut side facing bottom of the baking dish. Preheat the oven. Cook squash in oven for about 30-45 minutes at 400 F / 205 C. Smaller squash is ready faster. Squash is ready when tender. Let it stand outside on the countertop for a while to cool down a bit. Scoop fibers out with a fork using circular movements. This homemade meal is fun to bake at home and you will definitely enjoy eating it together with your family. In this video I compared the look of whole wheat pasta vs. spaghetti squash. I present step by step preparation and cooking process. Just follow my cooking technique and you will be able to enjoy your own delicious soft boiled eggs with liquid yolk. Remember to dip some fresh bread in egg yolk as this is pure food porn - just don't get too excited and enjoy eating. Bon Appétit! INGREDIENTS: FRESH EGGS (How many? - How many you want to eat!) SALT AND BLACK PEPPER TO TASTE (optional) I recommend serving soft boiled eggs with toasted bread on the side. Cooking Instructions: 1) Bring water to boil in the cooking pot and then reduce to medium heat. 2) Place eggs in the boiling water. Be careful when handling eggs to the pot. Use some big kitchen tool to place eggs at the same time in the water. 3) Boil eggs for exactly 5 minutes. No longer and definitely no shorter than that. Make sure to set a timer to measure 5 minutes. 4) Using kitchen heat protective gloves pour away the hot water from the pot and pour with running cold water from faucet. This will stop eggs from further boiling and rendering them hard boiled. Keep eggs in cold water no longer than one minute (because if you do so you will end up with nasty cold soft boiled eggs). 5) Take eggs out. Wipe eggs with paper towel. Place eggs in egg cups. Crush the top part of egg shell. Scoop out of unwanted egg shell. Using tea spoon eat soft boiled eggs. You may even dip toasted bread in egg yolk. In this video I present Homemade Ginger Lemonade Recipe. I show how to make lemonade with fresh squeezed lemon juice. It's naturally refreshing and healthy drink and I made it sugar free as I used stevia. It's easy to make and it can assist cleanse and body detox diet and weight loss effort because juice gives best health benefits to your drink. This way it is loaded with vitamins, enzymes and especially with vitamin C. This beverage obviously contain no preservatives. You can use this recipe everyday to boost your energy on summery days to cool down. If you prefer more soda type drinks you may substitute water with mineral sparkling water and that will result in a carbonated drink. As you see you can always adjust recipe for your needs and your preferences. Ingredients needed: 3 lemons 2 inch of ginger root 1/2 gallon of chilled water stevia extract OR sugar OR other preferred sweetening substance Preparation instructions: 1) Wash 3 lemons and peel them off. 2) Cut about 2 inch long piece of ginger root and peel it off. 3) Juice lemons and ginger. You will get lemon - ginger juice that is the base for your lemonade. 4) Mix juice with chilled 1/2 gallon of water. Now you have basically lemonade but it will be very sour. To make it sweet you may add pure stevia extract or sugar (or any sweetening substance that you like) if you prefer more traditional way. 5) You may add some ice cubes to make this beverage more refreshing. I made this ginger lemonade sugar free as I used stevia to save on calories and carbohydrates. If you prefer sugar then go for it. Lemonade will be still delicious but it will have heavy caloric content. Processed sugar is also not the best friend for our teeth and a whole body in general. Ginger will give rich taste to this refreshing beverage. Chill water before adding lemon juice. You may also add some ice cubes turning it into the best refreshing and delicious drink for hot days and also great as a detox tonic for a healthy life style. Oyster Mushroom Soup Recipe made with sauteed peppers of all colors is featured in this video. I show how to cook this pearl oyster mushroom vegetable soup in an easy way (in a single pot!) with veggies: carrot, parsnip root, onions, garlic and herbs. It's healthy and homemade recipe and it is great for weight loss diet, low carb and both: vegan and vegetarian lifestyle. It's loaded with fresh veggies. Ingredients needed: 1 lbs oyster mushroom 1 carrot 1 parsnip root 1 red pepper 1 yellow pepper 1 orange pepper 1 green pepper 2 onions 2 l vegetable broth 4-5 garlic cloves cooking oil salt as desired Spices: black pepper as desired 5 pieces of allspice 3 bay leaf 1/8 tsp ground dried ginger 4 tbsp oregano Cooking instruction: Wash all your vegetables and mushrooms under running water before cooking. 1) Cut oyster mushrooms into slices. Warm up cooking oil on the cast iron pot or big soup pot. Place mushrooms on warm oil and sauté for 10 minutes. Mushroom will reduce their volume. Transfer mushrooms to the plate or bowl when they are sautéed. 2) Add more cooking oil if it is needed to the same pot. Add all other ingredients: red pepper, orange pepper, yellow pepper, green pepper all of them cut into small cubes. Shred carrot and parsnip root on medium holes. Cut onion into cubes. Cut garlic cloves in small pieces. Add also salt and herbs: black pepper, bay leaf, allspice, dry ginger and oregano. Sauté veggies with herbs for 10-15 minutes on medium heat. 3) When vegetables are nice and soft add previously sautéed oyster mushrooms. Combine everything well. 4) Add vegetable broth and cook until the firs boil. Taste and add salt if it is necessary. 5) Serve in a soup bowl and Bon Appétit! You may keep this soup in the refrigerator for several days. It tastes the best on the second day as the spices will enhance the flavor of the soup. This soup can be eaten just like that or it can be served with some bread, toasted pita or chips. This Baked Camembert as Cheese Recipe with honey is a great appetizer idea to start your evening meal. In this instructional video I will show you my easy method how to bake this cheese and I will also give you advice how to recognize when baked cheese is ready to be taken out of the oven. In the end of this video I will give you some suggestions how to serve this dish. Camembert cheese is a creamy and soft type of cheese made from cow's milk and then aged for at least three weeks. It also bears some resemblance to the brie cheese in its appearance. You may purchase it in a wooden box or a paper one. If you have wooden box then bake cheese directly in it and also serve in the same box. For this recipe I bake cheese without a box as it was sold in a paper container. First you will need to unwrap your cheese and then place it on the baking dish. Cut cheeseboard pattern lines on the top of the camembert cheese using kitchen knife. Cut one garlic clove in wedges and stick them inside the cheese. Proceed in a same way with fresh rosemary herb. Preheat oven. Bake at 400 F / 205 C for 20 minutes or until liquid (melted fat) leaks out. When you see this liquid fat then you know your camembert is ready to be taken out of the oven. Place cheese on the board - I think it looks better when it is served that way. Pour some honey on the top. Serve with toasted bread. Link for my own white bread recipe can be found below. Today I show Oven Roasted Salmon Fillet Recipe. I show how to cook salmon to make vegetarian dinner. This baked seafood recipe yields rich in taste and colors dish. Not feeling like eating a bird for Thanksgiving but still ok with consuming fish then this seafood recipe is for you as you can use it as a healthy vegetarian Thanksgiving dinner idea. The blend of spices I use in this video gives fish more holiday-ish taste. Brown sugar gives it a nice glaze and cinnamon gives that surprising yet great flavor. So how to cook those fillets? First: purchase or catch wild salmon. Clean the fish fillets under running water and dry with paper towel. Prepare spice blend using following spices: brown sugar, cinnamon, smoked paprika, chipotle chili powder salt and pepper. Rub mixed spice blend evenly over the fish. Preheat oven to 450 F / 230 C. Bake for 10 - 12 minutes - that is optimal time for oven baked salmon. If your fish fillets are thinner or thicker you will need to adjust the baking time. Oven Roasted Butternut Squash Recipe stuffed with vegan filling is presented in this simple video. I show how to bake healthy butternut pumpkin in the oven. I present full preparation for easy and tasty filling that is loaded with delicious veggies (onions, corn, bell peppers, beans) and sautéed mushrooms but also quinoa that is a healthy grain. This recipe is a great example that healthy food is also very delicious. Adding aromatic herbs, spices and fresh veggies give rich flavor to the taste. Squashes are loaded with nutrients so let's take advantage of those pumpkins and eat them as long as they are available in the season. This vegetarian filling is a great example that you may play with cooking. Stuffing is delicious and balanced with taste but you can always adjust it to your needs. Ingredients needed: 1 butternut squash For squash filling: 1 cup cooked quinoa 1/3 cup sweet corn 1/3 cup black beans from can 1/3 cup red bell pepper 1/3 cup sautéed mushrooms with onion 1/4 tsp herbs de provence black pepper salt 1/4 tsp chipotle Cooking instructions: 1) Cut butternut squash in half. Scoop out the seeds. Place squash halves on the baking dish. Bake for 30 minutes on 350 F / 177 C. 2) When squash is baked scoop out the pulp (flesh) to make space for filling. Cut leftover squash flesh into cubes - it will be part of the filling. 3) In a bowl add previously cooked quinoa (follow the cooking instructions from the box), corn, black beans, red pepper and also previously sautéed mushrooms with onion. Now you can add cubed butternut squash and spices like: black pepper, chipotle, herbs for aroma such as herbs de provence. Salt to the taste. Mix together all those ingredients. 4) Place equal amount of a vegan filling in each squash half. 5) Preheat the oven and bake for 30 minutes at 350 F / 177 C. This roasted butternut squash stuffed with vegan filling is great when it is served warm. Each half can be served as one serving for one person - it is very filling. This dish looks very pretty. Everybody will think that you put so much effort to make this dinner but in reality it is very easy and simple to prepare. Vegetable Quiche Recipe is presented in this video. I show how to make it using vegetarian ingredients only ( cheese, vegies, eggs ). This is great breakfast idea. Homemade quiche is a custard mixture of milk cream and eggs filled with variety of veggies, cheese and then baked in a pastry shell. This recipe is great idea for cooking egg dish in more presentable way and unusual. You can serve this quiche with a variety of sautéed veggies as a Sunday brunch meal for your family and friends. At this moment it is worth mentioning that although it is considered to be a French cuisine dish (hence the name) similar type of tart dishes were popular at the same time in many European countries. For example German word Kuchen also means tart and cake. To make this dish you will need pie crust. You can use store bought pie shell or make it from scratch using my recipe - link below. Pie Crust: https://youtu.be/6Ogp_fLBTlA Instructions for quiche filling: Slice one onion, one red pepper, 6 mushroom. Warm up the pan. Add some cooking oil and sauté vegetables. Spread sautéed veggies evenly on the bottom of the pie crust. In a bowl beat 5 eggs, 1 1/2 cups of half and half and some fresh ground nutmeg. Add 1 cup shredded mozzarella cheese to egg mixture and combine everything well. Drown veggies in the pastry shell in an egg mixture. Preheat oven. Bake at 400 F / 205 C for 40 minutes. Bake until the center of quiche is almost set but still jiggles a bit when dish is shaken. Cool dish slightly after taking out from the oven. Cut into wedges and serve. Creamy texture from avocado and sweet taste from raw honey makes it melt in your mouth. This healthy snack is great for kids and will for sure satisfy their sweet tooth craving. And by the way did you know that avocado is also called alligator pear - such a funny yet descriptive and accurate way to describe this fruit color and peel's texture... Ingredients needed: 1 avocado 1/4 cup canned coconut milk 1/4 cup filtered water (can be substituted with coconut water) 1 heaped tbsp of raw honey coconut flakes (optional for garnish) Wash avocado under running water. Cut it in half. Get rid of the seed. Scoop out the pulp and place it in the blender cup. Place all remaining ingredients in the blender. Blend until the texture is completely smooth. Garnish with a slice of avocado and some coconut flakes. This raw dessert tastes great served in this simple way. In this video I present Baked Brie Cheese Recipe. I show how to bake it in the oven and make great brie appetizer with broccoli. I will show you how to recognize when brie cheese is ready and how to serve it. I will also show you how to prepare crispy steamed and always greatly cooked broccoli. At the grocery store you will find brie cheese sold in a paper box as well as in a wooden container. If you purchase the one in a wooden container you may unpack it from the paper and then put it back in that wooden box, bake brie in it and also serve it in it. If you decided to buy brie cheese in a paper container you will need to bake it directly on the baking dish. Preheat the oven and bake cheese at 350 F / 177 C for about 40 minutes. Keep an eye on the brie to prevent it from burning at the top surface and if necessary reduce the temperature. If you notice the liquid coming out from the cheese then you will know that your brie cheese is melted inside and it ready to be taken out from the oven. Meanwhile when brie cheese is baking you may prepare the second part of this appetizer. Place washed and cut into smaller pieces broccoli head in a large pot with steaming basket. Steam it until al-dente. Just remember to not overcook it into mushy gray paste. Prepare a bowl with ice cold water on the side. Transfer cooked broccoli to cold water. Cold water will stop broccoli from further cooking. This cooking advice will help you to prepare crunchy broccoli and the green color will be much richer. Drain it well and place it on a big platter. Serve baked brie cheese together with broccoli. If you baked brie using baking dish you will need to put smaller plate in the middle of big platter with steamed broccoli. If you baked cheese in wooden container you may just leave it in that container and place it next to broccoli on the same platter. Brie cheese has specific taste and not every of your guests knows how to eat it. Many might think that you can only eat interior of the brie because they are falsely convinced that the skin is poisonous. They are wrong - the whole brie cheese is edible. In this video I present Coconut Milk Drink Recipe made with fresh squeezed orange juice. This delicious homemade drink is perfect when it's served cool on summers day. It's also a healthy drink as it contains only those two ingredients and it also helps you decide what to do with this annoying canned coconut milk sitting in your pantry. When served on parties you can add alcohol (but this is optional for adults) to turn it into cocktail or you can keep it a non-alcoholic beverage. This refreshing drink can remind you of tropical vacation. The sweetness comes from fresh oranges and the luxurious and rich creaminess comes from the rich and thick coconut milk. Mixing those two ingredients gives perfect combinations of flavors - simplicity makes it so great. You may refrigerate oranges for one hour prior to juicing to make this drink nice and cool so you don't have to water it down with ice cubes but of course you may also add some of them if you wish so. Making this drink in advance is also great idea. Just remember to fill out completely container if you need to store your juice for later - less air in the jar is better and will keep juice fresh for longer as it will not oxidize so fast. Of course it is better if you drink juice while it is fresh as then it contains the most vitamins and has the best taste. It is a vegan recipe as it is dairy free. Ingredients needed for 32 oz / 0.95l: 6 oranges 1 cup coconut milk from the can First wash well all oranges under running water. Peel them off and juice them in the juicer. Shake well coconut milk can before adding to juice as the creamy texture will have to combine with the liquid so there is no nasty and unpleasant clumps. When well combined pour this drink to a beautiful glass. Decorate glass with slice of orange. This juice drink is a great idea for parties but also for everyday use as it contains vitamins, healthy fat from coconut and nutrition. In this video I present Stuffed Deviled Eggs Recipe. I show how to make devilled eggs yolk paste filling with mushrooms, onions and mayo. It's easy and simple healthy vegetarian recipe and can be used for Easter holiday. Deviled eggs may hide under many different names like stuffed eggs, Easter eggs, mimosa eggs, angel eggs, Russian eggs, dressed eggs, picnic eggs or just hard boiled eggs. As additional tidbit (titbit) of news devilled eggs are British English and deviled eggs are US English. And if you don't know what all those homemade eggs are altogether then the answer is easy: those are hard boiled eggs stuffed with yolk paste usually made with other ingredients mixed in. Ingredients needed: 5 hard boiled eggs 2 tbsp cooking oil 2 small onions cut into cubes 6 mushrooms cut into cubes 1 tbsp mustard 2-3 tbsp mayonnaise salt black pepper green onion to garnish Cooking instructions: Set the stove on low-medium heat. Warm up the pan and add cooking oil. Add diced onion and salt. Sauté for about 5-8 minutes. Add mushrooms and stir well all ingredients. Add more salt and black pepper. Sauté until everything is tender and put it aside to cool it down. Boil 5 eggs, cool them down, peel them off and cut into halves. Scoop out yolks into separate bowl using small teaspoon. Put egg whites on the nice plate - the plate you will serve them on. Mash yolks using fork until you get similar consistency to the paste. Add chilled sautéed mushrooms with onions to the bowl with yolks. Combine everything well together. Add mustard and mayonnaise. Mix well and your paste is ready - this will be the stuffing for egg whites halves. On each half of the egg white put one heaped teaspoon of yolk paste. Make it look smooth by using table knife. Garnish with green onion. Your stuffed eggs are ready to be served. This dish always reminds me of family and Easter time. It also presents itself nicely on the table. In this video I present Avocado And Egg Sandwich Recipe. I show how to make spread with hardboiled eggs, avocados, mayo, mustard and spices. This is a great idea for breakfast sandwich. It will help you start your day in a healthy way. Ingredients needed: 1/2 avocado 2 hardboiled eggs salt black pepper 1 tbsp mayonnaise 1 tsp mustard 2 slices of bread Preparation instructions: Hard boil two eggs in advance. Cool them down. Peel them off and cut into small cubes and then place them in a bowl. Cut avocado in half. You will just need 1/2 avocado for two sandwiches. Cut avocado in small cubes also. You may use my technique of avocado cutting form the video. If you don't feel too comfortable or you are afraid that you could cut yourself using my method then cut avocado into cubes in more traditional way on the cutting board. Scoop out avocado pulp cubes and place it in the same bowl. Add salt and freshly grinded black pepper and then add mayonnaise and mustard. Combine all ingredients well and your avocado spread is ready. This spread has creamy taste. If you desire more creamy texture you may put everything to the blender or food processor but who has time for this in the morning while preparing breakfast. And I'm not even talking now about cleaning this mass (oh blenders...). You can use this technique for creamy avocado spread when preparing this recipe as an appetizer on toasted bread. Now you can put two slices of bread on the plate. You may use your favorite type of the bread but I recommend whole grain dark rye bread. This bready really goes great with this sandwich. If you are more into white bread then you can find my recipe for that below. Spread equal amount of avocado egg mixture on each slice of the bread. This sandwich is very easy to make and needs only few ingredients. You will be amazed how tasty and healthy it is. In this video I present Watermelon Smoothie Recipe that we can surely consider a healthy fruit drink that may help you with weight loss (as you can cut on unhealthy snacks). I made this refreshing summer beverage with lime and mint. For this recipe I don’t use any additional sugar or sweetener because watermelon is naturally sweet and can be consumed as a treat and as a part of a balanced and healthy diet. Add even more ice cubes than I did as I was running low on them at the time. Instructions how to make a fruit smoothie: 1) Cut watermelon in small pieces and transfer them to the blender. 2) Add ice cubes to the blender (as much as you desire). 3) Squeeze 1/2 lime to the blender. 4) Add 3 leaves of fresh mint. 5) Blend everything until smooth. 6) Pour to the glass and garnish with mint leaves. If you want to make this smoothie in an adults version then add some vodka. Refreshing drink on hot day or evening for sure will taste amazing. For this fruit smoothie I used watermelon with seeds as they don’t bother me at all and they are healthy. If you don’t like seeds you can purchase seedless watermelon. As always feel free to adjust recipes for your needs and taste. Vegans can enjoy this as well as vegetarians cause it doesn't contain any animal products. This sauce will add tons of flavor to any meal you cook and it is dairy free so lactose intolerant people and vegans can also enjoy it. Ingredients needed: 16 oz. / 454 g mushrooms 3 medium onions 1 tbsp vegetable broth concentrate 1 cup cashew milk 1 tbsp flour salt black pepper cooking oil or coconut oil (I used coconut) Instructions to make this mushroom sauce: 1) Warm up oil on medium-low heat on the pan. 2) Cut onions into cubes. Add onions on the pan and sauté for about 10 minutes. 3) Wash mushrooms and cut into small pieces. When onion is sautéed add mushrooms to the pan. 4) Add vegetable broth concentrate and stir well. Sauté for about 1 minute. 5) Add 1 cup of cashew milk. 6) Heat until everything boils and then mushroom sauce is ready to be served. This sauce tastes like the best fatty gravy with mushroom. Yeah! It tastes just like that! But guess what - it is very healthy. I don't use here any dairy products and it is not loaded with fat. The sauce itself is very thick so it has this craved gravy consistency. If you want this to be less thick add more cashew milk. I also didn't use here any meat or meat related products so if you are vegan or vegetarian then this is perfect sauce recipe for you. Pizza Dough Recipe is presented in this video. I show how to make homemade pizza crust from the scratch with yeast. This is only 5 ingredient recipe. It is so easy to prepare and bake your own pizza at home. You will never want to eat store bought pizza anymore! It can be prepared the same day but it is also great to prepare this dough in advance and leave it overnight in the refrigerator. With this dough you may make your pizza thin crust, flatbread or even thick crust - adjust to your preferences and needs. Spread some pizza sauce, add your favorites topping and bake just for couple of minutes. Your fresh and crunchy pizza from your own oven. I never went out for a pizza when I stared to make this dough - it's so delicious and simple. INGREDIENTS: 1 cup WATER 1 1/4 tsp YEAST 2 tsp SUGAR 1/2 tsp SALT 3 cup FLOUR 2 tbsp COOKING OIL Some extra flour for dusting. Cooking Instructions: 1) Warm up water to 105 F/ 40 C. Add yeast and sugar to lukewarm water. Mix until sugar dissolves. Let it stand for 5-10 min. 2) Add 2 cups of flour to the mixing bowl. Put aside for now the other 1 cup of flour and mix it with salt - this will be added later. 3) Add cooking oil and water with yeast and sugar to the mixing bowl. Use dough hook attachment to kneadt the dough. Knead for a minute or two and slowly add the last cup of flour with salt. Knead with a mixer for about 5 minutes. 4) Dust cutting board with flour. Knead the dough couple times with your hands. Divide it into equal pieces. Form a nice bowl from each piece. Dust with flour on the top. Cover with clean kitchen cloth and let it rest for 1 hour. The dough will grow little bit. 5) After 60 min form the shape of any pizza type that you like. I shape my in rectangle shape as it was convenient for me. Spread some pizza sauce. Add cheese and pizza topping of your choice. 6) Preheat the oven. Bake at 450 F/ 232 C for 10 - 12 min. 7) Bon Appétit! Additional cooking advices: * If the dough seems to a bit to dry add a bit of water while knitting. * Add some herbs to the dough like oregano, marjoram or Italian herb mix for extra tasty flavor. * Place pizza dough in a bowl and spray some cooking oil on the top and cover with plastic wrap if you want keep the dough overnight in the fridge. Next day take out pizza dough from the fridge and let it warm up for at least 60 minutes on the countertop. Continue procedure using cooking instructions part after that. I show How To Make Almond Milk from the scratch in this recipe and those directions can be use to make any and all nut milk such as cashew, hazelnut, walnut, Brazilian or pecan. This homemade nut milk recipe is very easy to make with a basic nut milk bag. You can use any nuts that you want or even mix few different kinds. In my opinion this nut milk taste as good as store bought ones; there is just one big advantage of making your own - there is no preservatives, additives or thickening agents of any kind and you end up with nice little addition that can be used in many other recipes - nut flour. When you prepare milk yourself then you can choose if you want to keep in unsweetened and simple or add some extra flavor such as vanilla extract. Go for stevia, sugar or any other sweet substance if you like it sweetened. This almond milk is great to add to your coffee, cereals, baking goods or sauces. You can simply use it whenever you use regular milk. You may drink almond milk straight from the glass like it is or add to your smoothies and protein shakes - the sky is limit. Soaking nuts in salted warm water activate b-vitamins but most important this method helps neutralize many of the enzyme inhibitors and activates some nutrients - that's why it important to soak them before making homemade nut milk. Ingredients: 2 cups ALMONDS (or cashews, hazelnuts, Brazilian nuts, pecans, walnuts) 2 cups FILTERED WATER (for first soak) 2 cups FILTERED WATER (for second soak) 4 cups FILTERED WATER (for blending) pinch of Himalayan salt Optional for extra taste: *dash of vanilla extract *stevia, sugar or maple syrup PREPARATION INSTRUCTIONS: 1) Place two cups of raw almonds in a container. Pour 2 cups of warm filtered water over nuts. Cover container with a lid and soak almonds for at least 12h. 2) After first soaking: rinse almonds and put it back to the same container. Pour another 2 cups of warm water and a pinch of Himalayan salt. Soak nuts for another 10 to 12 hours. 3) After second soaking: rinse almonds and place them in the blender. Add 4 cups of filtered water (not warm!). Blend it as much as possible. I have a Ninja mixer so it did what it could (but results are still manageable). If you have Vitamix then you know your privilege. 4) Strain nut mixture using nut milk bag or cheesecloth. Strain it really well. Pour nut milk to the bottles or containers. It is ready to be used. Place leftover nuts that you have in your milk bag in the container in the refrigerator as they can be used for pancakes, cookies and vegan cheese. This time I present Vegan Pumpkin Soup Recipe. I show how to make it from scratch. Winter time is perfect for this easy homemade and healthy pumpkin soup because it will surely warm you up. It's much more than just Thanksgiving soup. It's also a squash soup as pumpkin is the king/queen of all squashes. You can't go wrong with this squash and this pumpkin puree based recipe is just the tip of the ice mountain here. Let the magic happen and let's experiment with squash recipes. Ingredients needed for making this soup: 2 tbsp coconut oil / cooking oil 4 garlic cloves 4 - 5 onions 1 1/2 tbsp fresh ginger 2 tbsp tomato paste 1 tsp crushed chili pepper / or 2 dried peppers dash of cayenne pepper 1 tsp salt 1 tsp curry powder 4.5 - 5 lbs pumpkin puree 1 can coconut milk 4 cups vegetable broth First warm up the oil in the large cooking pot. Add freshly grounded garlic. Sauté for a minute. Add onion (cut into cubes), fresh ginger and sauté. Add tomato paste and spices. Sauté until soft. When onion is ready add pumpkin puree. You can use pumpkin puree from the can or make it from scratch by yourself. You can even use big chunks of baked pumpkin (as it will be blended later on). Link for my puree recipe is below. You may add a pinch of salt to prevent burning. Sauté on low heat for about 1 hour. Stir occasionally. Let it cool completely before further processing. 2) Rinse off garbanzo beans / chickpeas under running water and drain it well. Add beans to the blender. Add: tahini, black pepper, salt, lemon juice, olive oil. Blend all those ingredients in the blender or food processor until it reaches completely smooth texture. 3) Add to the basic hummus 3/4 of previously sautéed onion. Combine hummus and onion using spoon or spatula. Don't blend it together. 4) Transfer hummus on the serving plate. Smooth the top surface and add the rest of sautéed onion on the top for decoration purpose. It's Ready! Baking these crunchy and buttery vanilla cookies is just pure fun and eating them is a sweet pleasure. Prepare your mixer and let's bake some crisp cookies together because I will show you how to make them step by step. This is cookie dough recipe without eggs. You will find below full list of ingredients needed for this sugar cookies as well as complete preparation instructions on baking them. Ingredients: 250 g ALL PURPOSE WHITE FLOUR 100 g POWDERED SUGAR 140 g INSTANT PUDDING POWDER MIX (VANILLA FLAVOR WORKS EXCELLENT) 1 tbsp VANILLA SUGAR 250 g UNSALTED BUTTER, SOFTENED *IF NEEDED: 3 tsp OF WATER IF THE DOUGH IS TOO DRY - IT CAN BE CAUSED IF THE FLOUR IS TOO DRY BAKING INSTRUCTIONS: 1) Place in the mixing bowl: flour, vanilla sugar, powdered sugar, instant pudding powder and butter. Combine well all ingredients using kitchen mixer. 2) Cover cookie dough in plastic wrap. Place the dough in refrigerator for at least 1 hour or leave overnight. 3) Using small spoon measure equal amount to form the bowl from the chilled dough. Place dough balls on the baking dish. When all balls are placed you may use my technique to form round and flat cookies. Press kitchen mallet on the top of each cookie. It will not only give you nice design but also level equally all cookies thanks to what they will bake at the same time. 4) Preheat the oven. Bake at 375 F / 190 C for 10-13 minutes (until the edges of the cookies start browning). This sugar cookies recipe is super easy to make. You can prepare the dough in advance and bake cookies just before you want them to be ready. Those cookies are very crunchy and they will serve wonderful as a delicious and sweet snack. I love to eat those buttery cookies when they are served with coffee or tea. They not only look beautiful but also have their own homemade design. You don't need to buy any fancy cookie stamp design. Use kitchen mallet as I did or you can shape them pressing fork on the top of each cookie. Just try to make each cookie have same size and shape - it will help with baking. In this video I present Squash Seeds Recipe. This is a healthy vegan raw dessert (or snack...) that can be made of any squash seeds including spaghetti squash, butternut, acorn, pie pumpkin, red kuri, calabaza, delicata, hubbard, kabocha and so on. In case if you wonder what to do with those seeds the answer in pretty easy and simple and may be surprising - you can actually do nothing and eat them raw. No baking required. This is actually a way healthier, more nutritious and tastier option than roasting them. So - save your seeds! Don't throw them away. Raw seeds are edible and I will share with you my technique how to prepare them. I show you how to make this treat without spending any additional money. This is very universal way of dealing with those unwanted seeds that should be actually considered little marbles or gems. Let's assume that you already have some type of squash. Wash your squash. Cut it in halves and scoop out all the seeds. You can use regular spoon but I recommend to use cream scoop tool if you have one. I found out that this works best as it wouldn't bend like a regular spoon. When the seeds are out you can do whatever you were planning to do with your squash or you can see my squash recipes that are linked below this description. Step by step preparation of squash seeds: 1) Separate flesh and fibers from seeds. 2) Place all seeds on the strainer. 3) Rinse off seeds under running water and drain them well. 4) Put clean paper towel on the cutting board. Place rinsed seeds on the paper towel and leave them there to dry overnight. When they are completely dry then they are ready to be husked and to be eaten. I used here spaghetti squash but you can feel free to choose any squash that has nice seeds and that you like. It is very easy, doesn't require any additional costs and it puts to use (recycle) this part of squash that most people throw away with garbage. And why? Those seeds are like little gems when eaten raw - full of fiber, healthy fat and microelements. While you are eating them you are also burning calories as you have to work out to husk them. Of course caloric balance is positive (you take in more calories than you burn) but you wouldn't have to work so hard while devouring a donut, right? You can use husked seeds also to garnish your salads or just to add them to your meal. In this video I present healthy Baked Cinnamon Apples recipe made in oven and with no added sugar. I show how to make this easy baked apple halves for a sweet dessert. I'm preparing this fruit dessert in two different styles. Healthier way is when apples are baked plain - just with a cinnamon. The other way is by adding ice creams and maple syrup to your sliced apple halves so you can satisfy your sweet tooth with this guilty pleasure. Ice cream will melt nicely on hot apples and maple syrup will add its great flavor and sweetness to this baked fruit. Heads up here as the second version is high in sugar and definitely will not support the weight loss or healthy lifestyle goals (but the first version will!). Ingredients needed: 3 apples 1/8 cup cinnamon 6 scoops vanilla ice creams (optional) 6 tsp maple syrup (optional) Wash you apples under running water. Dry them well. Cut apples in halves. Carefully cut off tops and the bottoms (stem and remains of calyx) of your apple halves. Cut off the core on the cutting board to prevent hurting yourself. Knife could go thru the apple easily and hurt you while holding this in your palms. Sprinkle apple halves well with cinnamon. Use all 1/8 cup of cinnamon on all 6 apples. Transfer all apples to the baking dish. Put the apples upside down. Cinnamon side facing baking dish surface. This is important to bake apples this way. Apples would dry out if baked other way. Bake apples at 375 F / 190 C for 25 minutes. Serve each apple half on a small plate. You can eat them just like that - that is the healthier version. If you want to treat yourself a bit then I recommend to serve each apple halve with one scoop of vanilla ice cream. Glaze it also with 1 teaspoon of maple syrup. The dessert is ready. Ice cream will start melting from the hot apples and it will mix nicely with maple syrup - pure temptations and satisfaction. This is a very easy vegan gingerbread cookies recipe and those cookies will fit perfectly your Christmas table. Naming this cookies was some sort of challenge for me because the "cookie recipe" part of the name was always clear/bright as a sun to me, nothing else was. I kept the gingerbread cookies style but I have added also some pumpkin puree what kind of makes them pumpkin cookies and because pumpkin puree goes well with certain spices that makes them pumpkin spice cookies but pumpkin spice is also gingerbread spice. Troubles are not finished yet as I also used some peanut butter and that makes them peanut butter cookies what makes everything triple troublesome. To add some more those are vegan cookies as I decided to go dairy free and egg free in this recipe. So the name that best shows what this cookie recipe is should goes as follow: Homemade Vegan Gingerbread Pumpkin (Spice) Christmas Peanut Butter Cookies. This name although 100% correct is just hideous! So now you see my pain. Instructions how to make cookie dough from scratch. Mix all dry ingredients in the bowl: 3 ground cloves 1/4 tsp ground ginger 1/2 tsp cinnamon 1/2 tsp baking soda 1 cup all purpose flour 1/2 cup coconut flour dash of Himalayan salt In the separate bowl combine all (wet) ingredients listed below: 1/4 cup pumpkin puree 1/4 cup coconut oil 1/4 cup peanut butter 1/2 cup sugar dash of vanilla extract Mix all wet ingredients using mixer. When they all are well combined start adding slowly dry ingredients. Mix until you will have crumble texture of the cookie dough. Transfer part of the crumbled cookie dough on the plastic wrap and start kneading. When the dough have solid form cover it on the top with another sheet of the plastic foil. This will help with rolling - the cookie dough will not stick to the roller. Roll the dough until it is about 1/8 inch thick. In this video I used simply one of my glasses to cut cookies from the dough. You can use any cookie shaper or any glass you want. It is up to you what kind of cookies you crave :) For decorating my cookies I'm using cookies stapler. It is optional but I just really enjoyed the look of this beautiful pastry stamp sign "Made with Love" and I'm sure every little cookie enthusiast will appreciate it even more. When you are satisfied with the shape of your cookies transfer them to the baking tray and bake for 10 minutes at 350F/175C. As you can see I didn't use any animal products in this cookie. I'm not able to tell you how long until those confections are gone cause anytime I make them they are gone in less than 2 days. Today I present Vegan Matcha Green Tea Latte Recipe. This is simplified version for everybody who would like to try make homemade matcha but doesn't want to invest big money in fancy and expensive equipment. So let's see how to make this homemade tea step by step. For this matcha latte you will need ingredients listed below: 1 1/2 tbsp matcha powder 1/4 cup hot water pinch of green stevia powder 1 cup almond milk dash of vanilla extract Add matcha powder to your favorite elegant and cute cup. Pour 1/4 cup of hot water. Mix it well and let it stand for couple of minutes. Add pinch of green stevia powder. This is natural sweetener made from stevia plant leaves. It is green in color and has sweet greenish and earthy taste. Green stevia is healthier than pure stevia extract which is white is more processed and therefore it has less antioxidants. You may try using it in this recipe as I think it enhances the taste in a very nice way. If you prefer add your favorite sweetener like sugar, maple syrup or honey. In the meantime warm up in a pot 1 cup of almond milk. You may substitute this with cashew milk. Add vanilla extract to the milk and stir it well. Pour the milk over the tea in the cup. Only one important think is missing now. The foam! Transfer milk and match tea to the blender cup and mix it for several seconds. All the ingredients will combine well and nice foam will be created. Pour it again to your cup and you will get this beautiful latte foam on the top of your tea. You will not need any special tea equipment to make this. No need to buy any fancy bamboo whiskers. Believe me this matcha latte tastes amazing. It is very healthy vegan drink. It is also much cheaper to make it at home than buying from coffee or tea shop. You may also have in control the quality of the ingredients and the procedure itself. KIMCHI - the greatest ingredient in this recipe - is known in Korean cuisine. It is traditional side dish made from fermented vegetables, most commonly napa cabbage and Korean radishes with salt and a variety seasoning like: chili powder, garlic, ginger and scallions. It has very specific taste and a characteristic smelly scent when you open a jar. Black rice (forbidden rice) is known as the healthiest type. It is great source of fiber, contains minerals like: copper and iron. It is even a good source of plant based protein. It also has one of the highest level of anthocyanin which is antioxidant. Be careful when buying black rice as there are many companies that sell colored white rice! It is easy to recognize this kind of the scam because while rinsing the fake rice under running water it will make enormous quantity of black water. Real thing will color water just a bit and more while cooking. DON'T EAT this kind of rice whenever you see or experience this enormous coloration while rinsing. This scam rice usually comes from China and who knows what coloring they were using. I used California Heirloom Black Rice made by SunWest company (this wasn't sponsored!)- I just share it as I found this to be good quality black rice. Use whatever brand you want just be alerted about colored rice on the market. I went easy with vegetables combination. I used frozen veggie mix of corn, peas, carrots and green beans. I found that those veggies go great with this rice meal. They also add colorfulness to the dish. You may use your favorite vegetables while making this rice dish. This rice meal taste great when it is served warm but you can also eat this cold - this is just personal preference. I cooked 1 cup in 2 cups of water with salt on medium low heat in covered pot. Cook for 35 minutes or until all liquid is absorbed. 2) Warm up cooking oil on the pan. Add mix of frozen vegetables. Add dry herbs: herbes de provence. Sauté veggies. 3) Add cooked rice to the pan and mix with sautéed vegetables. 4) Place mix of rice and veggies in a bowl. Baked Cheesecake Recipe, homemade classic preparation with farmer's cheese as a main ingredient is presented in this video. I show how to make an original and easy plain cheesecake without crust. There is no cream cheese in this simple recipe that's why this cake is very soft, light and fluffy. Baking it with farmer's cheese is an authentic way of preparing this cake and in my opinion it is the best basic cheesecake that you can make in your own kitchen. You don't need any special equipment. You would be able to make this simple cheesecake with a whisker and spatula but to make our life easier I recommend using kitchen mixer. Ingredients needed: 100 g unsalted butter 1 kg farmer's cheesecake 3 times grounded (you may buy farmer's cheese in a 1kg container in European grocery stores) 100 g sugar extra 1 tbsp sugar (for egg whites) 1 pkg vanilla sugar 6 eggs 2 tbsp potato starch extra 1/2 tsp potato starch for dusting 1/4 tsp cooking oil 1 very important strawberry for decoration Cooking instructions: 1) Place warmed to room temperature butter and sugar in a mixing bowl. Mix it until smooth. 2) Meanwhile, separate egg whites from yolk. Add yolks slowly one by one to the mixing bowl with sugar and butter. Mix until smooth. 3) Add vanilla sugar, potato starch and mix. 4) Slowly add farmers cheese. A bit at one time and let it mix until it's all nicely mixed in with other ingredients. 5) In a separate bowl beat egg whites with a dash of salt. Beat until egg whites are foamy. Continue to beat on high speed and add 1 tbsp of sugar at the end. The whites should stick to the beater when it is raised. 6) You may combine cheese mixture with egg whites foam in the mixer on low speed or like I did in a bowl using spatula. Mix those two very slowly. If you do it to fast the cheesecake may shrink after baking. 7) Preheat oven to 380 F / 190 C. 8) Grease 9 inch springform pan with cooking oil and dust it a bit with potato starch using strainer. 9) Pour filling into prepared springform pan. Shake it a little to level the surface. 10) Bake in preheated oven for 75 minutes. Cheesecake should be ready when the middle is still a bit shaky as this cake still cooks even after taken out of the oven. 11) Let the cake cool down. You may decorate it with some melted chocolate or spread and OFCOURSE a strawberry. Refrigerate for 30 minutes and it is ready to be eaten. Refrigerating helps chocolate to get solid and cheesecake will also be easier to slice. This is very traditional cheesecake recipe. It is easy to make and the reward of delicious taste is priceless. You will not want to stop after one slice. It just tastes beyond imagination when it is served with coffee or tea. Your home will smell like real bakery while your cake is in the oven. It is also good idea to bake this cake in advance like one day before. All flavors will come through together and cutting this cake will be like a dream. If you don't have chocolate or chocolate spread you may decorate this cake on the top with some jam, vanilla yogurt or just dust it with some powdered sugar. This cake doesn't need much on the top as it is so delicious and taste by itself. Today I present Vegan Banana Peanut Butter Smoothie Recipe. This healthy drink is rich in taste and I used for it only vegan ingredients (including milk substitute). This recipe contains nuts so people allergic to them have been warned. New Year has just started and if your temporary new year's resolution is a healthy diet, getting in shape, weight loss, cutting on sugary snacks and drinks (and any other of those lofty resolutions... :)) then this banana smoothie can be your little helper. I considered this a healthy smoothie as it doesn't contain refined sugar - sweetness comes from sugar naturally occurring in bananas. To make this recipe you will need to collect all products listed below: 2 cups banana (can be ripe or frozen) 2 cups almond milk (unsweetened) 128 g OR 1/2 cup peanut butter 1/2 tsp cinnamon dash of vanilla extract 1 cup ice cubes Combine all ingredients until completely smooth using kitchen blender. Serve in your favorite glass or in the jar as I did. Garnish the top with some cinnamon spice and it is ready to be served. This smoothie is very easy in preparation and can be properly stored in refrigerator for couple of days so you can prepare it in advance. If you wish to store it for later make sure that it is air-tight container and that it is actually fully filled (do not store half filled containers as the drink will turn bad faster). All used ingredients in this video are easily available in any grocery store. Now some extra advice: You may control thickness of this smoothie by adding more or less almond milk. You can substitute almond milk with other vegan milks. If you want it to have more of frozen shake's texture you may freeze banana in advance and add it to the blender. In this video I present Homemade Iced Coffee Recipe made with Nutella and coconut flakes. I show how to make iced coffee for your sweet tooth treat at home. I know what you must be thinking now: iced coffee and Nutella equals best drink ever!!! In the beginning I warn you that this doesn't have anything in common with healthy lifestyle or diet. Instructions: 1) Brew your favorite coffee little bit stronger than usually (as it will be watered down later on by ice cubes). 2) Cool brewed coffee and put in fridge for 30 minutes. 3) Cover evenly big glass with 1 tbs of Nutella. 4) Cover glass edges also with Nutella and coat them with coconut flakes. 5) Put some ice cubes into the glass. 6) In separate bowl pour chilled coffee and 3 scoops of ice cream. Mix it gently. Do not break ice cream balls and do not dissolve them completely. 7) Transfer 2 scoops of partially dissolved ice cream scoops to the glass with Nutella. 8) Pour coffee to the glass. 9) Transfer the last (third) scoop in the end. 10) Serve with a straw and enjoy your best iced coffee. This recipe is for those of you who suffer for a sweet tooth disease but still don't want to go and buy McDonald's Frappes or anything else from them for that matter... I claim that my iced coffee is better than McDonald's Frappe cause I use Nutella and they DON'T! Case is closed! :D How do you like that? :) This can become your favorite dessert. Today I present Vegan Veggie Burger Recipe. It's meatless, healthy, vegetarian and prepared with thanksgiving leftovers - cranberry sauce and butternut squash serving as vegan patties. This eliminates the need for processed vegan patties, products or substitutes that many times have long list of shady ingredients and very often are based on wheat flour, rice flour, soy protein or sometimes pure isolated gluten. You would be surprised how often those vegetarian patties contains almost no vegetables in them. You never thought that some slice of pure vegetable (well technically a fruit...) could substitute meat or a patty? Stay tuned - The Food Nut got you covered with this recipe! Addition of the fresh produce to your diet and substituting red meat with a plant based ingredients will not only benefit your health but also will make you feel better. There are millions of recipes for meatless veggie hamburgers (even if this expression seems counterintuitive and unlogical...). The most popular vegan patties are made with black beans. I got really tired recently of black beans and I decided to be more creative. I was craving for something new in my sandwich but at the same time I wanted to keep it healthy and tasty. I came to my little kitchen and check my pantry. And it HIT me hard (the idea I mean!)! Why not make this burger with butternut squash? Preparation for this recipe is very easy and simple. You will need to bake nice piece (slice) of butternut squash. And BOOM! It's ready. No need for mixing lots of ingredients when you want to make a really fast meal. No complicated techniques, methods or process. Just cut nice piece of butternut squash that should be of a regular patty size. Oil it, salt for the taste and add spices such as black pepper and chipotle. Bake at 400 F/ 205 C for 25 minutes in the oven or toaster oven on toast program/mode for about 30 min. It is ready when the squash is soft. You can check with a fork to see if it is tender already or if it needs more baking. This is vegan recipe so I don't use here any type of dressing or mayo that contains animal products. Guess what?! Butternut squash goes perfectly with cranberry sauce. So why to use and regular type of sandwich dressing when you can substitute it with a healthier version. Yep - you can use the same sauce you ate on Thanksgiving or you can use my easy cranberry sauce recipe. In this video I present Roasted Potatoes In Oven. This recipe is very easy and you will see how to bake potatoes with herbs and spices. I used here fresh herbs to give this healthy dish great aroma and taste but you may use dry herbs if fresh are not available in your pantry at this time. To make those potatoes you will need ingredients listed below (serving for 2 people): 2 baking potatoes 2 garlic cloves 2 tbsp olive oil 1 tbsp thyme 1 tsp sweet paprika 1 tsp black pepper 1 1/2 tsp salt crushed red pepper (as desired for hot taste) Potatoes cooking instructions: 1) Wash potatoes well as they will be baked in the peel. You may remove some peel's imperfections if it's apparent. 2) Cut potatoes into even cubes as it will help to bake them evenly. Place potatoes in a large bowl. 3) Mince garlic finely and add to the bowl. 4) Add spices to potatoes: sweet paprika, black pepper, salt and crushed red pepper. Add thyme and olive oil and mix everything well. 5) Place potatoes on baking dish and bake at 350 F / 175 C for 45 minutes. Those potatoes go almost with every type of the meal. If you wish you may substitute baking potatoes with Idaho potatoes, red potatoes or even sweet potatoes. In this recipe I use lots of hot spices that give it extra kick. If you want it to be less spicy then add less of hot stuff or just skip it all together - it will still be delicious. I used fresh thyme for my oven baked potatoes but if you have only dried one you can use it as well. Remember to cut potatoes evenly. If you don't know how long to bake potatoes then I have to tell you there is golden rule for roasting potatoes - until they are golden :) I like to eat those potatoes with white fish marinated with salsa. Ingredients needed: 5 avocados 3 limes 1/2 cup cashews 1/2cup coconut milk or (any vegan milk of your choice) 1/2 cup chopped cilantro 4-6 roasted garlic salt and black pepper to taste How to make this dressing: 1) Place garlic clove in an aluminum foil. Cover it in foil and roast in toaster oven or oven. You may also toast garlic on the dry pan in clove skin. Let it cool and peel off. 2) Place avocado mesocarp (meat/pulp) in a blender or food processor. 3) Squeeze fresh lime juice into the blender. If you desire less lime taste you can add just one lime and more vegan milk. 4) Add vegan milk to the blender. Mine dressing in this video recipe was pretty thick. If you want more loose texture add more milk or vegetable broth. 5) Add cashews, fresh cilantro, salt and black pepper. Blend until dressing is completely smooth. And then it is ready to be served. This avocado dressing has creamy texture. Lime gives refreshing and sour taste. Cilantro gives its herby pleasant and aromatic smell. You may control consistency by adding more vegan milk or vegetable broth - it just depends what are you going for. I assure you that you will love this. It is just great healthy vegan alternative. In this video I present Raw Vegan Parsley Salad Recipe. I show how to make this vegetable salad using tons of parsley, ground sumac spice, onions, lemon and extra virgin olive oil. This is very healthy side dish and can be a part of any lunch or dinner. Ingredients needed: 1 bunch of parsley 2 medium red onions 1/2 lemon 1/8 cup extra virgin olive oil salt black pepper 3 tbsp ground sumac Instructions: Wash parsley really well. I recommend to soak parsley in a bowl with water for couple of minutes, move it around the bowl while parsley is submerged under water and then wash any remaining dirt under the running water. Parsley may contain lots of dust and dirt even if it doesn't look so bad. Drain it well. Chop it and transfer to a big salad bowl. Squeeze fresh lemon juice on the parsley. Let parsley soak in the juice. Meanwhile chop red onion into small cubes. Add onion, salt, black pepper, sumac and extra virgin olive oil to the bowl. For those of you who don't know what is sumac: Sumac is a spice that comes from the berries of bush that grows wild in Mediterranean areas. It has sour and fruity flavor. Sumac is offend used in Middle Eastern Cuisine. You can find it in any grocery store that has nice variety of international imported produce and spices. Mix well all ingredients. This salad is ready to be eaten right away but you will be rewarded if you can be patient and let it sit for about 30 minutes. After that time salad will taste even better as all flavors will combine well together. This vegan raw salad goes great with potatoes, stir fried veggies, fish or virtually any meal that you could think of. You may also serve this as a side dish or appetizer.
